In an article in The Glades Star, September 1983, Mary Strauss explained that under the lean-to-roof sat the steam boiler which provided a source of power and hot water. In the middle sections were the three cookers in which the sauce and apple butter were made. The left wing housed the apple grinder, the press, the bin for apples (lifted by elevator) and the engines.
